Flax & Chia crackers

One of the things that makes low carb eating onerous, for me at least, is cutting out potato and corn chips.  The combo of salty and crunchy gets me every time!

Here is a really good recipe for making really yummy crackers out of flax and chia seeds.

20180520_210454_HDRPut a cup of flax seeds and 2-3 tablespoons of chia seeds into a mixing bowl with a cup of water and let them soak for 15-20 minutes.  If you like, you can add some sunflower seeds or pepitas to the soak.

After the soaking time is done, stir in a tablespoon of honey, salt to taste, and any other seasonings you like (cayenne, garlic, cumin, Italian blend, crystallized lime, etc…).  We did garlic salt.

Mix well and spread it very thin film on a parchment paper-covered baking sheet.

Score them into cracker-sized pieces with a knife or pizza roller.

Bake 45-60 minutes at 200 degrees, then use the parchment paper to turn the crackers over and bake for another 45-60 minutes.

When these are stored they can become a little soft, but you can take out a handful and toast them directly on the rack of a toaster oven for 3-4 minutes and they are right back to crispy and crunchy.
